In honor of Father’s Day I am posting one of my husband’s favorites – guacamole!


1 roma tomato, diced
1-2 green onions, diced
handful of cilantro, chopped
clove of garlic, smashed or finely diced
1-2 Tbl olive oil
1 Tbl lime juice (about half a lime)
2 avocados
salt and pepper to taste

  1. combine all but the avocados and mix thoroughly
  2. add avocado and mash
  3. enjoy on tacos or with vegetables (jicama and plantain chips are popular with my kids)
